home run lasagna

Last night Fares and I made lasagna that was awesome.  It was a spur of the moment thought in the store.  As I didn't have any recipe at the time I just bought the main ingredients and figured we would throw in extra things at home.  

I am always very careful with lasagna as it is usually too dry or to runny.  That being said, Fares and I made this one up ourselves and it was the best lasagna I have ever had.  All the kids loved it and Aaron called it a home run ~ thus its name. 

one package pre-cooked lasagna noodles
29 oz can of tomato sauce
16 package Italian sausage 
1 pound ground beef
15 oz tub of ricotta cheese
16 oz tub cottage cheese
mozzarella cheese
2 eggs

Heat oven to 425 degrees.  Cook Italian sausage and ground beef.  Meanwhile mix ricotta cheese, half cottage cheese, one cup of mozzarella cheese, eggs, and garlic galore seasoning.  When meat is done cooking add 3/4 cup water, the spaghetti sauce blend, and can of tomato sauce then mix.  

Get out a large 9x13 pan.  Place meat mixture on bottom.  Layer meat with noodles then cheese mixture and repeat.  End with a final layer of meat at the top.  Sprinkle the top of the dish with 1 1/2 - 2 cups of mozzarella.  Cover the pan with tinfoil and place in oven for 1 hour.  Let it stand for 5-10 minutes before serving.
